Ayam Goreng Kunyit Recipe [Turmeric Fried Chicken 炸黄姜鸡]

Hello everyone, today I am going to share the recipe of a dish that I really love: Ayam Goreng Kunyit! When I was still studying in secondary school, my grandma used to cook this dish for my family and I every other week and we will finish it in a matter of minutes. After I moved to Kedah, I had many meals in Malay restaurants where they serve this dish too, but none of them taste even half as good as the one my grandmother made. Those that are sold outside are just so bland in taste and texture... and I blame that on using turmeric powder instead of using real pounded turmeric. I have been longing for my grandmother's turmeric fried chicken so I decided to make them for my family and myself last weekend when I was home. It was a last minute decision so I did not manage to consult my grandmother beforehand... but it turns out to be 90% similar. Hehehe, maybe I should cook this dish again for my grandma to try one day and see if she approves.

Can you see all the crunchy fried turmeric at the top? How to get this if you use
turmeric powder only? Impossible! Good food requires hard work too!

Ingredients: Serves 4-5 people


4 whole chicken leg
6-7 bulbs of turmeric
3 tbsp of salt

Korean Pan-Fried Zucchini (Hobak-jeon) Recipe

Hi folks, it's been awhile since I last updated this blog. Last holiday, I went to a korean BBQ buffet with my boyfie and sisters. The food was pretty average in general except the seaweed soup and the hobak-jeon! OMG, I had like 2-3 bowls of soup and so many slices of the hobak-jeon. After flying back to Kedah, I was still so hooked on to the taste of hobak-jeon. Plus, seeing it in korean dramas once in awhile just fires up my craving for it even more. 90% of the time the situation goes like this: it is late at night and you're catching up on your Korean dramas... then suddenly they show you a scene of them eating dinner and you see hobak-jeon. Damn... I went to sleep with a grumbling tummy. 

So, last weekend, I actually bought a small little zucchini and decided I need to make this dish myself. It is near impossible to get Korean food in my current city, so I just gotta take things into my own hands if I want to fix my cravings. With all that said, this is how my hobak-jeon turned out ☺

It is really just pan-fried zucchini... but oh god, it is so yummy.

Ingredients: Serves 1-2 person

1 small-sized zucchini (I used Japanese zucchini as I couldn't find the thick and fat ones)
1 egg, beaten
1 cup of all-purpose flour
Salt

Swedish Meatballs

Hello everyone ♥ Today I am going to be blogging about meatballs and it is going to be a worth try, trust me!
This whole meatball thing started from me making a lot of fuss about not getting a chance to try the IKEA meatballs yet up until today. Well, sometimes even if you're in IKEA... you will tend to give up on waiting for the meatballs as the cafe is always so packed with humans everywhere, long ass lines and messy tables which are left like that because we Malaysians really don't know how to clean up after ourselves. I hate to admit that we take this as our 'culture'... LOL *shakes head*.

I think I actually left the cafe on two separate occasions, both 5 minutes after walking in, as I don't see any hope of even getting a messy table to eat on after actually getting my food. The crowd is really crazy especially on weekends. So, just one fine day, I decided to Google "How to make IKEA meatballs" and I found the perfect recipe that I committed myself to try. I cooked this recipe for the second time already, so I can safely say that it is really a good one! Take a look!



Ingredients:

For the meatballs: 
900g of minced beef
1/2 cup of Japanese breadcrumbs
2 large egg yolks
1/4 tsp of ground allspice
1/4 tsp of ground nutmeg
1 large onion (diced)
Cooking oil
Salt and ground black pepper to taste

For the gravy:
1/4 cup of butter
1/3 cup of all-purpose flour
3 cups of beef broth (I used beef bouillons)
3/4 cups of sour cream
Salt and ground black pepper to taste
Freshly chopped parsley for garnishing

Red Braised Pork Belly 红烧肉 (Hong Shao Rou) Recipe

Hello folks, Happy Winter Solstice to everyone! Tonight is supposed to be the shortest day of the year (so obviously night time is going to be longer). For the Chinese, today we celebrate 冬至 which literally means winter solstice festival in English. We will prepare glutinous rice ball (tong yuen) in the morning and offer some for prayers before eating them ourselves later in the day. They used to say every year you eat tong yuen and that signifies that you're getting one year older. Every year, Winter Solstice is an important day as my extended family will all gather together and have a great feast for dinner! With a great feast, comes a long day of slaving away in the kitchen preparing dish after dish of food for the dinner. Today I am going to share the recipe of a dish which I just made for the first time ever: 红烧肉! The source of inspiration for this dish is due to all the mainland chinese dramas that I've been watching previously where they keep bringing up this dish! Hehe...


Ingredients:

600g of pork belly
40g of rock sugar (crushed - about one small rice bowl)
4 cloves of garlic
10 g of ginger (approx. 1 inch block)
10 g of the white parts of green onions
2 tbsp of soy sauce
1 tbsp of cooking wine
1 1/2 tsp of salt
4-5 tbsp of cooking oil

Chicken Quesadillas

Hello everyone, it's been 5 months since my last blog update. How are all of you? Hope all of you are doing well.
I guess the long hiatus in my food blog was simply due to lack of inspiration and motivation in the last 5 months. I could not bring myself to check out interesting new recipes nor did I have the mood to cook anything a little more than simple. It was a dull period where I cooked only to eat... and I ate almost the same few things every day. Come to think of it now, I really have no idea what was going on during that time. I just felt so unmotivated. About 2 weeks ago, I made Chicken Quesadilla (inspired by a recipe I saw in one of my cookbooks) because I figured I had left over tortilla wraps anyway. Personally, I simplified the whole recipe into a really easy one because I do not have some of the ingredients as stated in the book. So today, I am going to share my version of this easy Chicken Quesadilla which is quite a good comfort food when you really need some TLC.



Ingredients: (Serves 1)

Tortilla wrap (any flavour) 1 piece
2 slices of Cheddar cheese
1 chicken breast about 120g, sliced
3 shitake mushrooms, sliced
1/4 of a big onion, sliced
10-15 spinach leaves
3 cloves of garlic, minced
Red pepper flakes 1 tsp
Chilli powder 1 tsp
Dried basil leaves 1 tsp
Salt
Coarse black pepper

Easy Kimchi recipe

Few weeks ago, I decided to make my own kimchi. I did it mostly because many Korean recipes that I wanted to try require the use of kimchi and store-bought kimchi are so rare here in SP. Many years ago, when I was still a secondary school student, I used to make bottles of kimchi and store them at home because I really liked them a lot. Even my grandmother likes it, so we are like two big fans of these pickled vegetables. Experimenting with it again now, I was half expecting it to fail. But thank God, it turned out to taste exactly how I would like it to be. I got this recipe for kimchi from Maangchi.com, a website owned by a cute Korean food blogger who generously shares all her recipes too. Of course, I did some alterations in the recipe as some ingredients cannot be found here in Malaysia. Still, thanks to her recipe, my bottle of kimchi turned out be quite pleasing and useful for many other Korean dishes. 



Ingredients:

500g of napa cabbage (or also known as chinese long cabbage)
1/4 cups of salt

For the porridge
1 cup of water
1/8 cup of glutinous rice flour
1 tbsp of sugar

For the kimchi paste
1 1/2 tbsp of fish sauce
3/4 cups of hot pepper flakes
4 cloves of garlic
1 tbsp of minced ginger
1 small onion
3-4 stalks of green onion
1/2 cup of radish (julienned)
1/4 cup of carrots (julienned)

Wonton Soup recipe

Yesterday, I suggested that we have wontons for dinner as I bought a packet of wonton skins about two weeks back and I still haven't used it yet. Since both he and I had a nearly empty fridge except for the wonton skins and also meat, he agreed to have only wontons and rice for dinner. Hehe :D 

I suggested that we make wonton soup as we have been eating mostly fried stuff for two days straight. But, after wrapping all the wontons, he decided that there are too many wontons and putting all of them into the soup would spoil the dish. Hence, he fried half of them. We ended up having both wonton soup and also fried wonton, with rice! Still, since this post is about wonton soup, I'll only focus on wonton soup.

How to cook instant Japanese Curry!

I love Japanese curry. To me, it tastes a bit like Maggi kari soup with a thick texture. Imagine that, with tonnes of soft carrot and potatoes over a plate of hot rice. One word: YUMS. Two words would make it: SUPER YUMS. The best part is, Japanese curry is usually sold as an instant paste in Malaysia so anyone would have the skills to cook them. It is just like cooking instant noodles with a little additional chopping skills. I usually make a big batch of curry at once and then freeze the leftovers so that I can have them at some other time by just reheating it. Perfect for those lazy days when I don't feel like chopping and cooking and then washing a chunk-loads of pots, pans and dishes.



Ingredients: (Serves about 5 people)
1/2 a packet of Japanese curry paste (about 100g)
2 medium sized onions
2 medium sized carrots
2 medium sized potatoes
1 tbsp of oil

Simple Paratha Wrap

Saturday morning and I woke up hell'a early just because I couldn't sleep in any later. Damn... I think I am aging. Since I woke up so early in the morning, I figured I probably should fix a good breakfast for myself. I probably hadn't make a nice breakfast for myself in months just because weekday mornings are too much of a rush and I like to have noodles from the hawker stalls on weekend mornings. Few weeks back, I bought frozen paratha's from Tesco because they were finally on promotion! Still, they cost RM 5 per package and that's equivalent to RM 1 just for a plain piece of paratha. Hence, I still think they are pricey despite being on sale. (heh! me trying to be frugal :P) Initially, I wanted to make it into a paratha roll and slice it up so that I get two pretty rolls for breakfast. Unfortunately, as always, I overestimated my ingredients and I was not able to roll it up. Well, that's okay since I decided to just fold it into two and call it a wrap ☺☺☺


Ingredients:
1 plain paratha
1 small tomato (sliced)
2-3 leaves from butterhead lettuce
1 frankfurter sausage
1 egg (beaten and seasoned with salt and pepper)
Sriracha sauce

Creamy Chicken Sopas

Many many years ago, when my sisters and I were still kids (my sisters were probably still in pre-school), we had Filipino maids at home while my parents went out to work. Those were the better days where maids are more trustworthy and most parents will leave their children at home with the maids so that they can work peacefully. Although I am still very young at that time, I do remember that my Filipino maids speaks English and they have their Sunday's off where they can go out to Pudu, Kota Raya, Bukit Bintang and dance at discos or hang out with their fellow Filipino friends. They will be out since morning and will be back around evening. I had Filipino maids for quite many years, and there is no doubt that I would remember some of their Filipino cooking. One of them, which my sisters and I have a particularly strong memory of is this: Creamy Chicken Sopas.


I didn't know it was called Chicken Sopas until my sister accidentally bumped upon a site which had the recipe for this. When I look at it now, I can totally remember how my Filipino maid used to feed us this, and I think I didn't really like it back then. She would always give us a gigantic bowl of this and make us finish it. Now, many years later, I think it is so creamy and heartwarming that I promised myself I am going to cook it a second time. Sigh, the good old times of running away from the feather duster in her hands because I refuse to eat :P 

Ingredients: Serves 5-6 people

400g of dried elbows pasta
300g chicken breast meat (thinly sliced, marinated with some salt and 2 tbsp of cornflour)
5-6 stalks of celery (thinly sliced)
1 large carrot (thinly sliced)
3-4 cloves of garlic (diced)
1 large onion (diced)
1 can of evaporated milk (about 300ml) 
50g of butter
3-4 tbsp of fish sauce (approximated to taste)
1/2 a cube of chicken stock
Black pepper

Fried Nestum Chicken Recipe

Today I am going to introduce one of my boyfie's signature dish: Nestum Chicken! It is similar to frying chicken fillets with a coating of breadcrumbs. The only difference is, the chicken fillet are coated with Nestum oats and they taste and smell ten times better! Oh my, I can literally smell the aroma of the Nestum while blogging about it. Such a dish, it is a crowd pleaser. This I can definitely assure you. It is good for picky kiddos, hungry teenagers, and even the elders! Usually I serve Nestum chicken as a side dish with rice but we can always just make it as a fun snack.



Ingredients: Serves about 4-5 people

3 pieces of chicken keel (de-boned and the meat is cut into bite size fillet strips like above)
200g of Nestum oat
300g of all-purpose flour
2 large eggs (beaten)
Oil

Marinade:
2 tbsp of soy sauce
1 1/2 tbsp of oyster sauce
Pepper

One Whole Tomato Rice [一个番茄饭] [Rice Cooker recipe]

Hello, I finally found the time to blog again! Since I am having dinner alone tonight, I've finally made this whole tomato rice which is all the craze now. Truth to be told, it is VERY EASY to make this meal and it did not taste as yucky as I thought it would be. Nope, it turned out to be quite yummy considering I only used such simple ingredients.



Ingredients: (Serves about 1.5 medium sized bowls of rice)

Loh Mee Recipe [ 卤面 ]

Hello! It's been a looong time since I posted a new recipe despite the fact that I went through a long holiday. I had been super busy all holiday that I didn't have much time to experiment with new recipes. Two days ago, I was shopping for groceries in Tesco and I saw the thick yellow egg noodles for sale. My immediate thought was, "Gosh, I miss having Loh Mee...". The Loh Mee that I crave for isn't the type that we can usually find in northern Malaysia where they use thin yellow noodles and have a darker broth. The Loh Mee that I crave for tastes a little bit like shark-fin soup as it is served with black vinegar and it looks like this! 



Ingredients: (Serves 2 big portions)

400g of thick yellow egg noodles
150g of sawi bunga (choy sam, 菜心)
350g of boneless chicken breast meat
2 eggs
80g of fish cake
2 small garlic whole bulbs
1 cube of chicken bouillon cube
Light soy sauce
Black vinegar
Salt

Assam Fish [Rice Cooker Recipe]

Hello! I've been out for a long looong time with no updates at all since I was really busy the past few months. I had multiple exams, went for a long holiday, and had some personal issues to settle so I really had not much time left to cook something. It is my study break now before I head on to my final exams at the end of June, so I'm taking a little spare time off my study to update this blog again. Today, I'm gonna be sharing how I make Assam Fish using my little rice cooker :D

Simple ABC Soup [Rice Cooker recipe]

Okay, I am so excited about this post because I finally figured out how to make soup using my rice cooker. God only knows, how MUCH I heart soup. Lotus soup, arrow root soup, herbal soup, seaweed soup, onion soup, miso soup, egg drop soup, ABC soup, any soup! You name it. I am a huge fan of you, soup. ☺

Sushi Cake [Rice Cooker Recipe]

Today is the 20th of March! Today is his 21st birthday! Hurray!!! *partypoppers*

To mark this special birthday, I planned ahead and made a special cake for him. Yup, it is the sushi cake. The reason why I thought of making a sushi cake is that: he has this constant craving for sushi. Every 2 or 3 days, he will be whining about wanting to eat sushi, pleading me to just give him some sushi rice and seaweed so that he can satisfy his weird cravings! Therefore, I just thought like, "Hey, maybe I can do a fusion of something like a cake and also like sushi?" I did try to Google for sushi cakes but all I get are pictures of sponge cakes decorated with fondant sushi. That's not what I am trying to look for, and I couldn't find a recipe and tutorial available online. In the end, I just decided to create my own version of a sushi cake. 

Tadaaa! This is my sushi cake! ♥♥♥

Ingredients:
2.5 cups of raw Japanese rice
1 cup of sushi vinegar
Mayonnaise
1 can of tuna in brine
1 small avocado
Several cherry tomatoes
21 medium-sized prawns
1 packet(box) of Korean roasted seaweed

Spaghetti Aglio Olio

It's been quite some time since I last posted a recipe. To be honest, I didn't really have the mood to blog about anything as I was really busy with Chinese New Year. I did manage to cook some dishes during that period so I took some pictures while cooking and decided to save it for later. So, today I am going to post about my favourite pasta dish, Spaghetti Aglio Olio ♥

Pajeon [Korean Pancakes]

Basically, I only manage to try out one other recipe during my year end break despite it being two weeks long. Many unexpected situations popped up during the hols which made it really busy and non-enjoyable at the same time. Anyway, I made pajeon which are basically korean version of the pancakes. It is hot and savoury at the same time, so I really love it. Totally my kind of food, heehee ♥

1/2 cup of All-Purpose Flour
1/2 cup of water
50-100g of scallions
1 large egg

Sweet Potato Porridge [Rice Cooker Recipe]

After many days of eating out, I decided that I should make porridge for dinner tonight. I know, I have OSCE and OSPE tomorrow and I should be studying... but honestly, I feel like exam is already over. Happens every time, especially the day right before the exam starts. In the past 4 months I've sat through 3 major exams at least and many uncountable minor ones, so that accounts for almost 1 major paper every month. A normal human being, like me, will definitely feel numb towards the thought of exam after all these repeated cycles. 

Hence, I decided I should just screw studying like I've never studied before and have a nice afternoon nap before getting up to prepare my dinner at 5PM! :D

Simple Guacamole Sandwiches - Student Recipe! ♥

Another week to go before I am due to sit for my GIT CA paper, another 2 final papers and also my GIT and RS OSCE.

STRESS LEVEL: ∞

Anyway, took a little break from studying today to make some sandwich for myself, and also the boyfie who has never tried guacamole before. Guacamole is originally a Mexican dish but has been adapted by many parts of the world now. When I told him what ingredients I'm going to put inside and also how I'm going to make the sandwich, he totally thinks he is not really going to like it. I am all set out to prove him wrong ☺
