Pajeon [Korean Pancakes]

Basically, I only manage to try out one other recipe during my year end break despite it being two weeks long. Many unexpected situations popped up during the hols which made it really busy and non-enjoyable at the same time. Anyway, I made pajeon which are basically korean version of the pancakes. It is hot and savoury at the same time, so I really love it. Totally my kind of food, heehee ♥

STEP 1: PREPARE THE INGREDIENTS

These are the main ingredients needed.

Crack an egg into a bowl and beat it. Set aside.

Wash the scallions and place them on a cutting board.

Cut them into half.

I even cut off the thick white ends, because I dislike the strong smell when
I am biting that area. You can keep it if you like.

Separate the stalks of leaves so that you will have a thinner root.
Just pull each leaf apart.

Arrange the batches such that there is a mixture of some from the root part
and also some from the leaf end. This way, the pancakes will taste more equal.

STEP 2: PREPARE THE BATTER

First, prepare a bowl that is big enough to accommodate the length of the scallions.

Measure out 1/2 cup of flour and add it into the bowl.

Add in 1/2 cup of water into the bowl too.

Mix it with a spoon till you get a gooey texture as shown above.

Lastly, add some salt to give the pancakes some taste.

STEP 3: FRY THE PANCAKES

Pour some oil into the frying pan and heat it.

Grab one batch of scallions and coat it thoroughly in the batter.

When the oil is hot enough, transfer the coated scallions into the pan and
fry at medium low heat until the underside is almost cooked.
PS: You can add more batter using the spoon if you think you didn't coat well.

When the underside is almost cooked, flip the pancake over.

Now, use a spoon to spread some of the beaten egg on to the top side of the
pancake. This will make it tastier! :)

Flip the pancake over again to cook the egg. Fry until both sides are brownish.

STEP 4: CUT THE PANCAKES AND SERVE!

Cut the pancakes into bite sizes so that it is easier to eat!

Serve when it is hot! YUMMY ☺♥
