Sweet Potato Porridge [Rice Cooker Recipe]

After many days of eating out, I decided that I should make porridge for dinner tonight. I know, I have OSCE and OSPE tomorrow and I should be studying... but honestly, I feel like exam is already over. Happens every time, especially the day right before the exam starts. In the past 4 months I've sat through 3 major exams at least and many uncountable minor ones, so that accounts for almost 1 major paper every month. A normal human being, like me, will definitely feel numb towards the thought of exam after all these repeated cycles. 

Hence, I decided I should just screw studying like I've never studied before and have a nice afternoon nap before getting up to prepare my dinner at 5PM! :D


Ingredients: [Serves 1 person]
1 medium sized Japanese sweet potato
1 medium sized onion
Half a cup of rice
400ml of water
Salt
Pepper
Soy Sauce (Optional)

STEP 1: COOK THE RICE

Gently rinse the rice and put it in a clean rice cooker pot.
Add about 400ml of water into the pot, put on the lid and press 'cook'.

STEP 2: PREPARE THE RAW INGREDIENTS

Wash the sweet potato and onion. 

Peel the sweet potato and dice it up into small cubes.

Coarsely cut the onions too and put it in a bowl with the sweet potato cubes.

STEP 3: ADD IN THE INGREDIENTS

Once the rice in the cooker boils, open the lid and add in the sweet potato
cubes and also the onions. 

Stir to mix the sweet potato nicely with the soften rice. Also, this can prevent
the rice from sticking to the bottom of the pot. After mixing, cover the pot with
the lid again but do not cover fully. Put the lid slightly slanted on the opening
to let the boiling water evaporate and also to prevent it from flowing out.

STEP 4: WAIT FOR 8-10 MINUTES BEFORE CHECKING AGAIN

Stir the porridge again to prevent it from burning at the bottom of the pot.
Add about 1/2 tbsp of salt.
If there is still a lot of water like before, apply the lid again and let it boil longer.
If the water has reduced but the grains still look like soft rice, use your ladle to
stir it continuously as this will break the grains apart and form a sticky
consistency. I like sticky and thick porridge :D

This is a really filling porridge as we have rice (carbohydrates) and also sweet potato (carbohydrates) all together in one pot forming a tummy-warming dish. As we have sweet potatoes in it, this porridge do have a little sweet taste within it even without adding any salt, sugar or soy sauce.  Last but not least, serve it with any other side dishes that you have! It is all up to you to make it even tastier ♥
