INGREDIENTS
6 regular eggs
4 slices of bread
4-6 slices of ham
2 lemons
50g of butter
Salt
Pepper
STEP 1: PREPARE THE INGREDIENTS
Rough idea about the ingredients that I used. |
Cut up the lemons and squeeze. Juice from 2 lemons is enough, otherwise I think it will be too sour. |
Squeezy squeezy! |
Strain the lemon juice to exclude the seeds! |
Boil half a pot of water. |
Separate 4 egg yolks and put them into another pot. |
Put the pot with egg yolks over the pot with boiling water. This is how I do double-boiling since I don't have proper double-boiler. Make sure the two pots fit snugly with each other! |
Quickly stir to even out the egg yolks. |
Add the lemon juice (Add about 1- 1.5 tbsp at most, otherwise I find it too sour) |
Continuously stir the egg mixture! By now, you should melt that 50g of butter in another pan (or microwave). |
Once it thickens, add about 2 tbsp of melted butter into the egg mixture and stir well again. |
Add another 2 tbsp of melted butter and continue stirring until you get this smooth and thick consistency. |
Lastly, remove the pot containing the egg mixture from the bottom pot. Add about 1/4 -1/2 tsp of salt to the egg mixture. Depends on your taste. |
STEP 3: FRY THE HAM
Using the remaining butter in the pan, fry the ham. |
Just pile them all into the pan! |
While the ham is frying, toast your bread slices in the oven for like 2-3 mins. |
By the time your toast is done, the ham should be fried up nicely too! yums ☺ |
STEP 4: POACH THE EGGS
Boil a clean pot of water. |
Break an egg into a small bowl. |
Bring the bowl close to the surface of the boiling water and carefully lower the egg into the hot water. Remember not to simply break it into the pot! |
Let the eggs cook for 2-3 minutes, or until you see the egg whites are cooked but the egg yolks still look runny! Quickly remove them from the boiling water with a spoon. |
STEP 5: ARRANGE ALL OF THEM ON TOAST!
Take a piece of toast and spread some butter on it. |
Top with some fried ham. |
Add a poached egg. |
